As I posted yesterday about my goal of no take out for the week, Tuesday dinner was looming menacingly in my mind. You see, I usually do pretty good getting dinner on the table Monday night. But for some reason on Tuesday I lose steam and inevitably end up calling my husband to request Rumbi’s or Kneaders on the way home.

Thus I was DETERMINED to get a yummy, delicious dinner on the table to prove I could break the streak. So instead of eating takeout.

My sweet hubby and littles were eating homemade honey lime chicken enchiladas and watermelon!


Ever since I saw Honey Lime Chicken Enchiladas on Good Things Utah last March, I have been hooked on them. The recipe is the perfect blend of spiciness and sweetness. We can’t get enough. The recipe is from The Phe Mom Enon blog. And they are right – it is ROCK YOUR WORLD yummy!

I added some Corn on the Cob and fresh Watermelon to round off the meal. The littles enjoyed their slices in the tub. My husband thought cutting a slice each for the would suffice … nope … my two year old easily polished off five small slices. And the 10 month old wouldn’t let us pull his away.

It felt fantastic to break the streak and surprise my husband. It just took a little planning ahead. In fact, I started dinner right after the littles nap – at 3:00 pm. I sat them in their little chairs and told them that they would be my sous chefs for the day. The baby enjoyed playing with cans and my little girl was an excellent lime squeezer. Still, with all the distractions younguns bring, we wrapped up at about 5:00. But that is okay! Because it was delicious! We enjoyed an early meal and my husband was able to enjoy his right when he got home. This made for an earlier bath for the littles and an earlier bed-time hurray!!!

Planning ahead definitely helped! I knew that I had all the ingredients. I had my fresh fruits and veggies from my favorite coop – Bountiful Baskets.

Ooh, honey lime chicken enchiladas. Sounds like something we need to try. We love all things enchilada.
